Recipe: Almond Flour Banana Bread

Quick, easy, and delicious - this is a simple go to at our home for breakfast, travel or weekend snacking. It comes together in just a few minutes and the only thing you have to clean is the blender! If you’re new to gluten free baking, expect this bread to be more dense than a loaf made with wheat flour, and a bit more moist as well. I love the addition of dark chocolate chips sprinkled on top for a special treat, but to make this with less sugar opt for nuts or blueberries.

ALMOND FLOUR BANANA BREAD//

5 very ripe organic bananas

5 pasture raised eggs

5 tablespoons raw organic honey or maple syrup

5 tablespoons organic coconut oil

1 tablespoons organic cinnamon

2 tsp organic nutmeg

2 tsp organic vanilla

1 tsp baking powder (aluminum free)

2 tablespoons organic flax meal

2 tablespoons organic chia seeds

1 1/2 cups almond flour

1/4 cup organic coconut flour

1/4 cup arrowroot powder or organic sprouted oat flour

Extras: pecans, walnuts, chocolate chips, blueberries

Put all ingredients except almond flour into blender. Run on low until well incorporated - about 30 seconds. Add almond flour and pulse until almond flour is well combined. If you’re adding any extras, pulse those in at the very end. I added walnuts and pulsed a couple times to break them up and mix them in.

Line a loaf pan with parchment paper and pour batter into pan. Sprinkle with chocolate chips and bake at 325 for 1 hour.
