Recipe: Black Bean Meatballs
We love a good, simple crowd pleasing recipe around here. Minimal work, minimal ingredients and minimal clean up - that’s almost always my goal. Plus, these black bean meatballs are the perfect meal prep to hand off to an older kiddo. BLACK BEAN MEATBALLS//
1 lb pasture raised ground beef
1 1/2 cups cooked/drained organic black beans
1/2 tablespoon Transformed Salts salt and pepper blend or 2 tsp sea salt
1/2 tablespoon organic garlic powder or 2 cloves minced fresh garlic
1/2 tablespoon dried organic parsley (optional)
1/2 tsp turmeric powder (optional)
1/4 cup organic ground flax seed
1 Tablespoon Avocado oil or other high smoke point cooking oil
Mash the beans in a bowl with your hands by squeezing them, then mix all the ingredients together really good and roll into balls or make into patties. Heat the oil in a skillet (I use my iron skillet) over medium heat. If you have a pan with a lid they’ll cook even faster. You want to let them cook for 2-3 minutes on each side before rolling them. Total cook time to be cooked through is about 15 minutes. I broke one open to make sure they were cooked through. If you do them in the oven, drizzle the avocado oil on the pan and bake them at 375 for 25 minutes.
